Citrus, so refreshing and definitely a pick-me-up for the taste buds. This Lemon-Coconut Bar quickly became a huge favorite during my bakery days. The gooey lemon filling, nestled between a butter shortbread crust and lightly toasted coconut, how can you go wrong?!
Ok let's get to it! But first, like any good baker I have a couple baking rules which I'll mention over the course of my blogging journey.
1. Always use quality ingredients.
2. No semi-homemade shortcuts - you'll be rewarded with extra deliciousness in each bite.
So, for this recipe I like to use fresh squeezed lemons and lemon zest for an authentic flavor. Zest 1 or 2 lemons, cut those and the remaining lemons required for the recipe and get squeezing! Combine all ingredients together, pour on top of the pre-baked pastry crust, and bake for approximately 40-45 mins.
Let the sheet pan cool completely and cut into 3" squares.
