Cheesecake Therapy

What can I say, it's been a looonnnggg week!! It's Sunday and I'm still feeling the emotional hangover from Tuesday night's horrific election. After reading article after article and watching hours of news and interviews I still can't wrap my head around what happened. It seems like America fell down the Trump rabbit hole and our future as a country seems very uncertain.

Elections certainly bring up very closely held personal beliefs and values. These criteria are how we express who we are as individuals and how we relate to others, and the importance we place on the environment. There is not one thing that I can positively agree with on this candidate's platform. I find his nomination to be disgraceful, insulting, ignorant, and appalling!

On that sour note, I needed some serious kitchen time and baking therapy. I need cheesecake!!!

Maple Cheesecake with Bacon, Pecans and Maple Topping

I developed this recipe a long time ago when I had the bakery. These little minis were often requested from my catering client who loved serving these at luncheons and cocktail parties. They're the perfect little bite of sweet and salty thanks to the bacon crumble on top. And, if you're a vegetarian, the maple cheesecakes certainly stand on their own too. The classic graham cracker crust has just a hint of cinnamon which provides another layer of flavor.



With Thanksgiving around the corner and the possibility of having to engage in awkward conversations, I suggest serving these. They're delicious and easy to make. Also, most people know it's not polite to talk with food in their mouth. Wink wink....I won't judge if you keep them all for yourself either.
