Fresh Grapefruit & Honey-Thyme Gin Spring Cocktail

One of the things I love most about the spring season is the awakening of color. It's the season of bright fresh colors and I can't think of a better way to celebrate than with a pretty cocktail. Suddenly pinks, yellows, reds (you know!) are everywhere and the trees look full of life with their green leaves. After a long winter, springtime brings a much needed change of mood.
Like cooking and baking I love to use fresh natural ingredients when making cocktails. For this cocktail I'm using fresh squeezed grapefruits and a simple syrup of steeped honey and thyme. Both ingredients really elevate the drink with flavor and of course the beautiful pink color.
The honey-thyme simple syrup component of the cocktail is easy enough to make for a few cocktails or keep it in the fridge for up to one week. Quickly bring 1/4 cup of water to boil with some honey and a few springs of thyme and allow the flavors to hangout together for about one hour. This really helps the flavors develop which pair so nicely with the gin. Here I used Revivalist, Equinox Expression Gin, truthfully because I was drawn to the label (love it!) but I was also sold from the tag at my local wine shop. It's a great choice if you happen to see this bottle at your local store.
