Chocolate Banana Bread

Ingredients:

1 cup all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/4 tsp kosher salt
3 very ripe medium bananas
1/2 cup melted unsalted butter
3/4 cup dark brown sugar
1 egg
1 tsp vanilla
1 cup semi-sweet or bitter sweat chocolate chunks or chips

Heat oven to 350 degrees. In a bowl mix 1 Tbsp of all-purpose flour and 1 Tbsp of cocoa powder. Butter a 9" x 5" loaf pan and gently tap around the flour mixture so that the bread won't stick. Dump out the flour that doesn't stick.

1. Mix the dry ingredients in a bowl and set aside. These include the all-purpose flour, cocoa powder, baking soda, and salt.
2. Mash 3 large bananas until smooth. You can use a fork or a potato masher.
3. Pour the melted butter over the bananas and stir. Add the brown sugar, egg, and vanilla and stir together.
4. Slowly add the dry ingredients to the wet bowl and stir until just combined.
5. Add the chocolate chunks and stir these into the mix.
6. Pour in the prepared baking pan and into the oven for approximately 55-65 mins. My oven takes 60 mins until a toothpick tester comes out clean.
7. Allow to cool for 15 mins before going around the edges with a butter knife to loosen any sticky parts. Carefully dump the chocolate loaf onto a cooling rack.
8. Serve warm or room temperature.
