Peach Crumble

Ingredients:
Peach filling
4 peaches
1/2 granulated sugar
1 Tbsp chopped mint (optional)
Oatmeal crumble
2 cups all-purpose flour
1 cup old-fashioned rolled oats
2/3 cups granulated sugar
2/3 cups firmly packed dark brown sugar
1 tsp ground cinnamon (optional, depends on fruits used)
1/4 tsp kosher salt
2 sticks of melted unsalted butter
Pre-heat oven to 350 degrees.
Fruit Filling
Saute sliced fruit with 1/2 cup granulated sugar until soft, but not falling apart. Set aside to make the oatmeal crumble.
Oatmeal crumble
Combine all above ingredients in a large bowl adding the melted butter last. Stir until all crumble ingredients are well blended and moist.
In a ceramic or glass pie baking dish pour the cooked fruit and top with the crumble. Bake for 35-40 minutes until the crumble is bubbling and golden brown. Serve warm and with ice cream if you have it on hand.
